The world’s first “whole muscle seafood alternative” via fermentation is here according to AquaCultured Foods, thanks to using fungi to produce seafood substitutes for products like calamari, shrimp, whitefish, and tuna. And North Carolina-based Biomason has commercialized its tiles and bricks made out of bacteria as an alternative to CO2 high-polluting cement, with H&M planning to use the tiles in their stores. And Nike is adding pineapple leather to their materials palette.
