EVERY debuts yeast-fermentation egg alternative at buzzy NYC restaurant

December 11, 2023 |

In New York, a Michelin star restaurant that made waves in 2021 by announcing an all plant-based menu will be the first to serve an egg replacement produced via yeast fermentation.

EVERY Egg took EVERY—a foodtech company whose investors include Anne Hathaway and AB InBev—nine years to develop. It will be featured in a special, multi-course dinner developed by culinary icon Chef Daniel Humm and served at Eleven Madison Park.

“Eggs are a universal staple in every kitchen, and this is the first time we’ve crafted an event menu around a novel food product,” Humm said in a statement. “When we prepared an omelet using EVERY Egg, the taste and versatility was all but indistinguishable from hen eggs. We are excited about the potential of EVERY Egg to transform the food landscape.”

According to EVERY, EVERY Egg is the first product able to match the culinary versatility of eggs and able to be used as a 1:1 drop-in across the hundreds of culinary applications where eggs are used.
